Kitchen measurement conversions are one of the most common problems home cooks and bakers face. Recipes from different countries use different measurement systems — US recipes call for cups, UK recipes use grams, and Australian recipes sometimes use a tablespoon that's a third larger than the UK version. Getting the conversion right is the difference between a perfect bake and a disappointing one.

The most important thing to understand about kitchen conversions is that cups are a volume measurement, not a weight measurement. One cup of flour weighs 125 grams, but one cup of caster sugar weighs 200 grams, and one cup of butter weighs 227 grams. You cannot apply a single conversion factor across all ingredients — each ingredient has its own density. Our cups-to-grams calculator handles this automatically for 25+ baking ingredients.

For tablespoon and teaspoon conversions, the key variable is which country the recipe comes from. UK and US tablespoons are both 15ml (close enough for practical purposes). Australian tablespoons are 20ml — one third more. Three Australian tablespoons (60ml) is equivalent to four UK tablespoons. Always check the recipe origin before measuring.

Oven temperature conversions matter in every international recipe. British and European recipes use Celsius; American recipes use Fahrenheit. Older British recipes use gas mark. Tips for Accurate Kitchen Measurements

  • Weigh, don't cup — kitchen scales give the most accurate results. A cup of flour can weigh anywhere from 100g to 160g depending on how it's measured. Grams are always consistent.

  • Spoon flour into the cup — never scoop directly from the bag. Scooping compacts the flour and can add 20–30% extra weight. Spoon it in lightly, then level off with a straight edge.

  • Check the recipe's country — UK tablespoons (15ml) and Australian tablespoons (20ml) are not the same. If a recipe from Australia calls for 3 tablespoons, use 4 UK tablespoons.

  • US cups vs UK cups — a US cup is 237ml, a UK/AU cup is 250ml. The difference is about 5%. Small in casual cooking, but significant in precision baking. Always select the right cup size in our converters.

  • Fan ovens run hotter — reduce the temperature by 20°C (35°F) compared to a conventional oven setting. If a recipe calls for 180°C, use 160°C in a fan oven.

  • Get an oven thermometer — most home ovens run 10–25°C off their dial setting. An inexpensive oven thermometer tells you the actual temperature, removing one of the most common causes of baking failure.
