American recipes use Fahrenheit for oven temperatures, while UK and European recipes use Celsius. When cooking from an American cookbook or website, converting Fahrenheit to Celsius is an essential first step. The formula: °C = (°F − 32) × 5/9. For 350°F: (350 − 32) × 5/9 = 177°C — effectively 180°C for practical purposes.

The most common US baking temperature is 350°F (177°C, Gas Mark 4). This appears in the majority of American cake, cookie, and brownie recipes. The next most common are 375°F (190°C) for cookies and muffins, and 400°F (204°C) for roasting and bread. Memorising these three conversions covers the majority of US recipes.

American recipes are written for conventional (non-fan) ovens. If you have a fan or fan-assisted oven, reduce the temperature by 20°C (or 25°F). So a US recipe calling for 350°F (177°C) becomes 157°C in a fan oven — effectively 160°C.

One practical consideration: US ovens are often set in 25°F increments (300, 325, 350, 375°F). UK ovens are in 10°C increments. The conversions do not land exactly on round numbers — 350°F is 177°C, not 175°C or 180°C. In practice, using the nearest 10°C works fine, but for precise baking, an oven thermometer is the most reliable tool regardless of which system you use.
